Bam Pow Zuper Zucchini Soup

So about this time of year, a familiar refrain rises up in gardens around Australia- “What the *bleep* do I do with all these zucchini?” It’s such a problem that it’s lead to the establishment of a day- an actual day- called “Sneak Some Zucchini Onto Your Neighbours Porch Day”. Don’t believe me? Google it. You’ll get about 13,000 results and find some yummo recipes too!

I do lots with my zucchini. I grill em’, bake em’, saute em’, make noodles (yup, you read that right…recipe coming soon).  But this soup is one of my favourites. It takes about 10 minutes to make, you don’t have to sweat the zucchini first and it’s creamy and really yum. It even has the Captain Picky Stamp of Approval. For a cold soup made of green veg that’s practically unheard of!

Bam Pow Zuper Zucchini Soup

Prep Time: 10-15 minutes

Cook time: 10-15 minutes

Ingredients:

2 tbl coconut oil

1 medium onion, roughly chopped

1 tsp fresh grated ginger (you can use the powder but it really won’t taste the same and, if you LOVE ginger, I’d add more)

6 medium zucchini, skin on, chopped

6-8 cups vegetable or chicken stock (depending how thick you want your soup. I’d start with 6 cups and add more at the end of you want to thin it out.)

pinch of sea salt, optional

Instructions:

1. Heat oil in a large pot over medium heat. Add the onion and saute until softened, about 5 minutes. Add grated ginger and stir until fragrant, about one minute.

2. Add chopped zucchini and stir through. Cook over low heat for about 5 minutes, until zucchini starts to soften.

3. Add stock. If you are using commercial stock, read the ingredients carefully and don’t add salt. Campbell’s isn’t too bad. If you’re using homemade stock, add a three finger pinch of sea salt. Turn the heat up and bring to a low simmer for about 10 minutes.

4. When the zucchini is soft (spear it with a fork to check), remove from heat and let it cool for about 10 minutes before whizzing it up with a handheld blender or in a food processor.

5. Serve it warm or chilled. It’s seriously good either way. If you have some coconut milk yogurt on hand, stir a dollop in for an added zing.

6. Go steal your zucchinis back from your neighbour and make more soup.
