OK, so I gotta admit I feel a bit funny posting this as a ‘recipe’ since it was so ridiculously easy. But it’s a good reminder that paleo doesn’t have to be hard or expensive. This meal needed about 10 minutes of actual cooking time and was so yummy! Enjoy.
Bam Pow Paleo Zucchini Noodles with Smoked Sardines
Prep time: 30 minutes
Cook time: 10 minutes
Serves: 2-4 (or, ahem, one if you are really, really hungry)
Ingredients:
- 2 large zucchinis
- 2 cans smoked sardines
- 2 cloves garlic
- salt
- 1 tbl coconut oil
1) Make the zucchini noodles by shredding them with a julienne peeler. If you don’t have one, go get one NOW! This little kitchen gadget will rock your world. (Jamie Oliver’s brand is sturdy, sharp and on sale this week at Target for $11).
2) Place the peeled zucchinis in a bowl and sprinkle salt over them. Mix with your hands an leave them to sweat for about 20 minutes.
3) Rinse well, place them on a clean tea towel and squeeze the excess water out of them
4) Saute them in a pan with the oil and minced garlic for about 5 minutes. You don’t want them too soggy.
5) Push them to the side, dump the sardines in, and warm them up. I use ALDI’s Ocean Rise smoked sprats in olive oil. They’re cheap, delicious and contain only sardines and Extra Virgin Olive Oil.
6) Mix everything together and eat.
Mind. Blown.
